Blade made of high quality chrome molybdenum steel, hardened in a vacuum process to 56 - 57 Rockwell hardness. The matt-polished edge offers optimum rust resistance. So that every knife is sharpened from the start, the final grinding and removal is done by hand. The scalloped edge allows better cutting. The blade slides with less friction through each cut material. This allows fatigue-free working and protects the cutting edge.
